It’s the weekend! So no cooking tonight for Dad! Which is good for us as the fridge door fell off today…. Duct tape is currently being used to replace the door hinges. Strangely it’s actually working….

Dad’s verdict on today’s homemade egg mayonnaise salad sandwich and healthy snacks ??

Well here’s what he had to say:

“Very yummy, I liked the sandwich but something was soggy… I can’t remember what though….”

Great feedback, Dad. We’re guessing maybe the bread got a little soggy as we put freshly washed (and hastily air-whipped dry) lettuce as an extra filling. Oh well. Now we know for next time! Nothing mentioned about the peppers and cucumber – perhaps we should take that to mean they got gobbled up and there are no complaints to be reported back 🙂

Mum makes amazing soup on weekends so we’ll be sure to post a photo and recipe!

Happy Two Days Rest!!


Firstly our observation of Dad’s leftovers:

  • 95% of the tuna salad still left (hmmm… is Dad cheating by buying secret snacks?!),
  • half of the mixed nuts munched,
  • and no carrots or crackers left (good!)

Dad’s verdict:

“Too much pasta and not enough sauce”

Our thoughts: Ok, maybe we overdid it on the pasta – measuring dry pasta is tricky since it expands when cooked! (Like rice). But, sauce? It’s a salad!! There’s not meant to be a sauce or lots of dressing, as it’s low fat. You’re on our diet Dad – no sugary chutney or shop-bought gooey sauce. Maybe we could have used olive oil to add a little more flavour and texture, but it turned out we had none (mum had put vegetable oil in the pouring bottle which tricked us when making our shopping list!!).

Today not much cooking took place. Well, it did, but unfortunately it ended up thrown in the bin. Terrible attempt at couscous salad – what we learnt:

  1. We need to buy olive oil.
  2. We need to use a recipe for couscous salad.

Instead we opted for a homemade egg mayonnaise salad sandwich on ‘Best of Both’ bread. The mayonnaise was low fat, the eggs count as protein and we added lettuce for extra goodness.

Easy snacks to make for Dad were: chopped green and red peppers, sliced cucumber, a handful of mixed nuts with a teaspoon of sunflower and pumpkin seeds, and three oatcakes.


For inspiration we visited the BBC Good Food website. They have an excellent healthy section, and offer suggestions for the lunchbox (more for adults as opposed to kids school lunch ideas!). Looking at the ingredients we just purchased we opted for Tuna and Green Bean Salad – our variation on Good Food’s ‘Two Bean, Potato and Tuna Salad’. We swapped potatoes for pasta, and skipped the soya beans for extra salad (we  couldn’t find any in Aldi!). We also added parsley, and left the harissa and red wine vinegar (again we didn’t have them!). After taste testing, it was still great regardless of the absent ingredients!

The next thing we made was a simple healthy dessert. Plain natural low fat yoghurt and a handful of grapes, with a drizzle of honey on top. Another miniature snack box was filled with 20g (handful) of unsalted mixed nuts and raisins. Nuts are very fatty naturally so it’s recommended you only eat about 20g a day! Finally we cut up some carrot sticks, added some of Nairn’s oatcakes (1 packet = 3 oatcakes), two wafer crackers and about a tablespoon of low fat cream cheese spread for a dip (we bought a really handy snack box that has a separate dip compartment inside).

We’ll get Dad’s verdict on the taste tomorrow!


Just a quick look at what we bought today to stock up for Dad’s lunches in the next few days. Aldi was the supermarket of choice – 39p vegetables an offer we couldn’t refuse!

With ten pounds as the budget here’s what we got:

We only spent £8.56! (Minus the cucumber – Dad brought that back from work)

We decided to leave the new potatoes behind and instead use up some of the dry pasta in the cupboard. Now to create Dad’s lunch for tomorrow – recipe to follow!
